How to Make This 4 Ingredient Lazy Cake

Growing up, I had a family friend who used to make a version of this Lazy Cake for me every time I went over to her house. While her cake recipe still remains a mystery, I will be sharing my version with you all today! The good news is it takes just four ingredients to create a no-bake Lazy Cake that’s the perfect combination of crunchy and soft with a rich chocolate flavour that might remind you of a Rocky Road.

In addition to being no-bake, this Lazy Cake recipe is also super affordable. I often find all the ingredients at my local Dollarama. Despite it being a dessert served cold, I like to enjoy it all year ‘roud. So grab a glass of milk and thank me later, but be warned, once you have a bite, you’ll be heading back to the fridge for more.

oz (350 g) unsalted butter

oz (350 g) milk chocolate, I like to use Dairy Milk

oz (350 g) digestive biscuits
1
can sweetened condensed milk
Shredded coconut for topping, optional

Lazy Cake
Step 1

Start by creating a water bath for melting your chocolate. Bring a pot of water to a boil, then place a bowl or additional pot on top. Add butter and chocolate to the top pot. Stir occasionally until melted, then remove from heat.

Step 2

While the chocolate is melting, break the digestive biscuits into large pieces and add them to a mixing bowl. Don’t worry too much about making the pieces small.

Step 3

Add a can of sweetened condensed milk into the melted chocolate. Fold mixture until you don’t see any streaks.

Step 4

Pour the chocolate mixture into the large bowl with the biscuits and combine until all the biscuits are covered in chocolate.

Step 5

Line a small baking tray with parchment paper. Pour in the chocolate mixture and place covered in the freezer for at least 6 hours.

Step 6

After six hours, you can take the cake out of the freezer and enjoy it immediately or place it in the fridge for an additional 6 hours to allow the flavours to set.

Step 7

Remove the cake and parchment from the baking dish and slice to serve.

Sprinkle with optional coconut and enjoy!
