
Appetizers are an essential part of any dinner party, and while the main course usually steals the show, these air fryer cheese rolls will be a close competition. These Lebanese cheese rolls are also a very popular Ramadan appetizer, and that’s mainly because they are delicious and are all I crave while fasting.
Other recipes use homemade dough or puff pastry to make the rolls, but I used spring roll paper, which is easy to assemble and tastes delicious. Traditionally, using Akkawi cheese is the best option, but make sure to soak it in water first to remove the extra saltiness. I also like to mix a gooey cheese like mozzarella to give it the cheesy pull.
These cheese rolls will make your guests come back for seconds, so make sure to prepare more than enough for that. And if you have any leftovers, place them in the freezer and reheat them when ready to eat.

This recipe requires at least an hour chill time.

Shred Akkawi cheese and place the cheese in a bowl of warm water for at least 30 minutes to soak out the salt. The longer it sits in the water, the less salty it will taste.
In the meantime, let the spring roll paper sit at room temperature to thaw.
When Akkawi cheese is ready, drain the water and add mozzarella cheese, chopped parsley, black pepper and salt. Mix well.

Mix flour and water to create a paste. This will be used to seal the cheese rolls.
Place a sheet of spring roll paper on a clean tabletop or chopping board, add a teaspoon of the cheese mixture, and roll.

Start by folding the bottom corner up, then take in the sides, brush some of the flour-water paste on it, and roll all the way. Put aside.

Place all the cheese rolls in the freezer for at least an hour. The longer they sit in the freezer, the better, because the freezing process prevents the cheese from oozing in the air fryer.

Air fry the cheese rolls for around 6 minutes (or until golden brown) at 350°F.
If you don’t have an air fryer you can always fry the cheese rolls on the stovetop. Heat up frying oil and place the cheese rolls until golden brown.
Plate the cheese rolls, top with chopped parsley or pomegranate and enjoy.
