Banana bread is delicious, but if you turn it into French toast and then top it with a bananas foster-inspired caramel and a mascarpone whipped cream, you’ve got the best banana bread French toast and it’s perfect for a weekend brunch! This recipe is quick and easy, and you can use your favourite banana bread recipe or pick up a loaf from the store to make it even easier!

ingredients

loaf of banana bread cut into 8-10 1 inch slices

Custard:

large eggs

cup whipping cream

tsp vanilla extract

tsp cinnamon
tsp nutmeg

Bananas Foster Caramel

¼
cup salted butter
½
cup dark brown sugar
½
tsp vanilla extract

Tbsp chopped walnuts

tsp cinnamon

large banana, sliced into rounds

Mascarpone Whipped Cream

cup whipping cream

Tbsp icing sugar
¼
cup room temperature mascarpone cheese

For cooking the French Toast

Step 1

In a medium-sized bowl, combine the custard ingredients and whisk well to combine.

In a skillet over medium-high heat, add one tablespoon of olive oil and one tablespoon of butter. Once melted, dip the banana bread into the custard and place into the skillet.

Cook for about three minutes per side, or until golden brown on medium heat. Repeat, adding the remaining oil and butter as needed.  Set the banana bread French toast aside.

Make the bananas foster caramel: add the butter to a skillet on medium heat. Once melted, add in the brown sugar and walnuts. Cook until melted and the mixture starts to bubble slightly. Add in the whipping cream and cook for one minute on medium heat.

Turn the heat down and add in the banana slices and cinnamon. Stir to combine and cook on medium-low until the mixture thickens slightly. Set aside.

Make the mascarpone cream in a medium-sized bowl, and combine the whipping cream and icing sugar. Whip on high speed until medium-stiff peaks form.

Add in the mascarpone cheese and continue to whip until well combined and stiff peaks form.

Step 8

Assemble: place one to two slices of banana bread French toast per person on a plate, top with banana foster sauce, mascarpone cream and another drizzle of sauce over the top.
