In a large bowl, mash 1 banana lightly with a fork (it should measure to about ⅓ cup—if it’s more, discard the overflow). Add in melted butter and brown sugar. Mix to combine.
Add the egg yolk and vanilla extract. Mix well.

Add the flour, baking soda, and matcha. Mix until combined and no streaks of flour remain.

Cover and set aside to let the flour hydrate in the dough while the oven preheats, about 15 minutes.
Preheat oven to 350°F and line two large baking sheets with silicone baking mats or parchment paper.
Slice the second banana into thin rounds. Use a cookie scoop or spoon, scoop out 1-inch dough balls, placing them about 2 inches apart on the prepared baking sheets.

Bake cookies for 10 minutes, or until the edges are set and the cookies have puffed up.
