
If you love the flavours of tacos and the layers of lasagna, you are going to love this Mexican Taco Lasagna melty mash-up! This recipe consists of gooey layers of tortillas, beef, tomato sauce, beans, and cheese. Now, doesn’t that sound heavenly? Enjoy a slice as is, or load it up with all your favourite taco toppings, like sour cream and extra guacamole!

To a skillet over medium heat add olive oil, garlic, onion, pepper and jalapeno. Cook until vegetables begin to soften, about 5 minutes.
Add the ground beef. Season with salt and pepper. Once browned, stir in the taco seasoning and tomatoes. Bring to a gentle simmer and remove from heat.

To an 8 X 10-inch baking dish, start with a thin layer of tomato sauce followed by a layer of tortillas. Spoon on and spread a layer of refried beans. Top with the tomato-beef mixture and a layer of cheese. Repeat three more times.

Top with remaining tortillas, a thin layer of tomato sauce and finish with cheese.

Bake for 30 minutes at 350°F. Let stand for 15 minutes before slicing and serving. Garnish with a dollop of guacamole!
