If you need a dessert for New Year’s Eve, look no further than these delish and super-easy Champagne Cupcakes! We use our bubbly twice, first in the simple batter and secondly in the frosting! They’re a special treat that is perfect for those holiday parties! 

The recipe is really simple, making it an easy last-minute dessert. Just like any other cupcake recipe, dry ingredients get mixed with wet. The champagne gives it extra moisture and a little tang! I recommend bubbles that are on the dryer side, as your cupcakes will already be sweet! An extra dry brut or even prosecco works perfectly.

For the champagne frosting:

cup butter, softened

cups confectioners sugar

This recipe does require you to cool the cupcakes prior to frosting.

Champagne Cupcakes
Step 1

Preheat oven to 350°F. Line a muffin tray with baking cups and set aside. 

Step 2

Whisk together flour, baking soda, baking powder and salt in a medium bowl.

Step 3

In a large bowl, add cream, sugar and butter together using a stand mixer or a handheld mixer. Add in eggs, vanilla and champagne. Mix till just incorporated.

Slowly add the flour mixture in batches. Mix till just combined. Do not overmix.

Add evenly to the muffin tray.

Bake for 18-20 minutes or until a toothpick poked in the center of a cupcake comes out clean. Remove from oven and slightly cool. Transfer to a wire rack and let cool completely.

For the frosting: Bring champagne to a boil in a small saucepan, allowing the mixture to reduce from ¾ cup to about ¼ of a cup. Remove and let cool completely.

Step 7

Beat together sugar and butter until creamed. Add in vanilla and mix. One tablespoon at a time, add in the cooled, concentrated champagne liquid. Fold into frosting. If the mixture is too thin, add a little more sugar. 

Note: while the champagne cooks off in the cupcakes, there is a small quantity present in the frosting mixture that is not cooked off completely. 

Step 8

Add the frosting to a piping bag and decorate the cupcakes (when they are completely cool). Add gold sprinkles to give them a little shimmer.
