Cottage cheese is back at it again with a new viral recipe that is so simple and protein-packed we couldn’t resist. If you haven’t seen it yet, cottage cheese flatbread is trending on social media. The cottage cheese replaces bread in wraps while still tasting delicious. Not only is the cottage cheese flatbread nutritious, it’s also gluten-free.
While this recipe is easy to put together, make sure to bake it enough, otherwise you’ll risk the possibility of the flatbread crumbling, which can really ruin the beauty of it all. The toppings for this recipe were just things I had laying around in my fridge. Add whatever toppings you like and make a wrap you can’t get enough of.

Preheat the oven to 350°F and line a baking pan with parchment paper and grease with butter.
Add cottage cheese, eggs, Italian seasoning, onion power and garlic powder to a blender. Blend until batter-like consistency.
Pour batter on the greased pan and make sure that its thick. The mixture does not rise and having it too thin could burn and cause it to crisp up. Bake in the oven for 35 to 40 minutes, until golden brown.
Take cottage cheese flatbread out of the oven and top with your favourite toppings. I added slices of turkey, mayonnaise, mustard, arugula and tomatoes.
