directions
Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a medium bowl, whisk together flour, baking powder, salt and cinnamon, set aside.
In a large bowl, cream together the softened butter and brown sugar with a rubber spatula. Add the egg and vanilla extract and mix until well combined. Stir in the dry ingredients and sprinkles. Form the dough into a disc, wrap with plastic and let rest in the fridge for 15-20 minutes.
Lightly flour your work surface and roll out the dough to about ¼-inch thick. Use 1-inch cookie cutters to cut out fun shapes.
Place cookie cut outs on the prepared baking sheet. Dough scraps can be re-rolled and cut.
Bake for 8 to 10 minutes until the edges just begin to brown. Let cool on baking sheet for 5 minutes before transferring to a wire rack to cook completely.
While the cookies cool, make the cream cheese dip: Add cream cheese and butter to a large bowl or stand mixer and whip until creamy, about 1 minute. Add the icing sugar, salt and vanilla extract and whisk on low until the icing sugar is well incorporated then increase to medium-high and whisk until fluffy, about 1 minute. Fold in sprinkles and transfer to a serving bowl.
