Bouncy udon noodles coated in a spicy, creamy, slightly-sweet sauce, this fiery udon carbonara is a quick and satisfying slurp. It is inspired by a Korean instant noodle called Buldak Cream Carbonara by Samyang Foods, a creamy spin-off of their popular Hot Chicken Ramen Flavor which is itself a noodle spin-off of Buldak aka “fire chicken” – a dish of chicken pieces coated in a fiery red sauce.
If you have cheese powder (the kind you might sprinkle on popcorn), try adding some of that into this sauce too for the hint of cheesiness present in the inspiration instant ramen flavour. You can also use other noodles such as instant or fresh or frozen ramen, Chinese dry wheat noodles or even spaghetti. You’ll want about 1½ to 2 cups of cooked noodles for the amount of sauce in this recipe. Whether it’s because you can’t get your hands on that particular instant noodle or you prefer to reserve it for an occasional spicy treat, make this almost-instant Fiery Korean Udon Carbonara to satisfy your noodle craving!

Flavour and saltiness vary widely between bouillon brands. I used Organic Better Than Bouillon Roasted Chicken Base. Adjust to taste.
Bring a pot of water to a boil for cooking the noodles.
Into a serving bowl, place all sauce ingredients other than the water.
Cook noodles according to package directions. Drain and add directly into serving bowl with sauce ingredients, along with ⅓ cup of boiling water (or noodle cooking water). Toss to coat well.
Add butter and toss again until it melts fully in the noodle residual heat.
Garnish with scallions and enjoy!
