Warm summer days accompanied by this herby tomato toast are childhood memories I will cherish forever. My grandparents immigrated to Canada from Greece with a passion for their Mediterranean way of life. Dakos is a perfect example of their culinary style — simple, fresh, and smothered in olive oil. Dakos originated in the idyllic Greek island of Crete. Located south of the mainland, the island is the largest in the country. Rich in culture and history, Crete takes great pride in this popular meze. Dakos is traditionally made with Cretan barley rusks, called paximadi, which can be found in Greek specialty stores or purchased online. However, to make this recipe more accessible, I’ve opted to use sourdough, but any thickly sliced bread will do.

Toast bread of choice and layer on freshly sliced tomato.
Crumble 2 tablespoons of Greek feta and sprinkle with the dried oregano.
Drizzle with olive oil and season with salt and pepper to taste. Serve immediately.
