Everyone knows that grilled cheese and tomato soup go together like apple pie and ice cream, and this fun take on grilled cheese turns the gooey sandwich into bite-sized pieces that are perfect for topping your favourite hearty soup. We like to keep it classic with cheddar, but you can easily sub in your favourite cheeses and spreads for an elevated gourmet grilled cheese crouton. Just be sure to eat them quickly once you’ve added them to your soup to ensure maximum crispiness.

Butter, for spreading

slices bread

slices cheese
Your favourite soup, to serve

Step 1

Generously spread butter on one side of each slice of bread.

2 slices of buttered bread
Step 2

Flip one slice of bread buttered side down, and place cheese on top evenly. Top with remaining slice of bread, buttered side up.

Place sandwich in a frying pan and heat over medium-low. Cook for 2-3 minutes, or until bottom is golden brown and crispy. Flip, cooking for another 2-3 minutes, until both sides are golden brown and crispy, and cheese is gooey.

Step 4

Remove from pan and let sandwich cool slightly. Using a sharp knife, cut sandwich into ½-inch squares.
