All I need on a hot summer day is a bowl of this grilled halloumi watermelon salad with za’atar dressing while lounging by the pool. I grew up loving the summer because of the thirst-quenching fruits that are in season, and watermelon has always been a favourite. Its crunchy exterior and versatility make it totally crave-worthy. But do you know what makes it even better? When it’s tossed in a delicious dressing and mixed with cheese. While many pair watermelon with feta or goat cheese, halloumi is a great option too!
I enjoy adding different elements to summer salad to give it various textures and flavours. In this vegetarian watermelon salad, you’ll find a zesty za’atar dressing, date molasses and fresh mint paired with the stars of the show: watermelon and grilled halloumi. Za’atar is a blend of herbs popular in the Levantine region. It consists of thyme leaves, toasted sesame seeds, dried sumac, salt and sometimes other spices. It pairs well with many savoury dishes and does wonders for salad dressings!

Add watermelon and cucumber to a bowl.
Drizzle olive oil in a fry pan. When hot, add halloumi. Cook each side until golden brown, about 3 minutes per side. Set aside.
Mix extra virgin olive oil, balsamic vinegar, za’atar, lemon, salt and pepper in a small bowl.
Add halloumi and mint to the bowl with cucumber and watermelon. Pour the salad dressing over the ingredients and toss. Drizzle date molasses over the top and serve immediately.
