Holiday honey cake is traditionally made to celebrate the Jewish holiday Rosh Hashanah, because the honey symbolizes bringing sweetness to the new year. But it’s such a delicious cake that you can add it to your menu to celebrate Hanukkah too! Cinnamon, orange, apple and tea come together to create a warming blend of flavours that is so delicious when the weather is cold. We use spelt flour and coconut sugar in this version of honey cake to make it a refined flour- and refined sugar-free recipe that’s still just as delicious, moist and rich.
If you want to keep this holiday honey cake recipe really simple, skip the goat cheese frosting and berries, and instead, simply drizzle honey and sprinkle sliced almonds over top before serving. But we highly recommend adding the goat cheese frosting and berries for an extra festive holiday treat during Hanukkah.

Preheat the oven to 350ºF. Grease your baking pan of choice and place a piece of parchment paper at the bottom. You can use a spring form cake pan, 3 mini spring form cake pans, or opt for a loaf pan.
Combine all of the wet ingredients – brewed tea, honey, apple sauce, coconut sugar, melted coconut oil, orange juice and vanilla extract- in a mixing bowl. Whisk together to combine everything well.
Combine the dry ingredients in another bowl – spelt flour, baking powder and soda, sea salt and cinnamon. Give everything a quick stir.
Pour the dry ingredients into the wet ingredients and fold them all together with a mixing spoon.
Pour the batter into the prepared baking pan, or divide between 3 mini pans.
Bake for 40-45 minutes or until a toothpick inserted comes out clean.
Meanwhile, if you’d like to include the goat cheese frosting, mix together the goat cheese and honey in a small bowl until smooth and creamy.
Let the cake cool for at least 30 minutes before spreading the goat cheese icing over top. Finish garnishing with fresh berries, pomegranate seeds, sliced almonds and, if you’d like, an extra drizzle of honey.
Alternately, skip the goat cheese and berries and drizzle honey over top and add some sliced almonds.
