If you’ve been following the “will it focaccia” series on TikTok or Instagram, you’ve probably come across the viral Jelly Donut Focaccia. This focaccia is perfectly doughy, sweet and oozing with jelly. It truly tastes just like a donut! Simply use your favourite regular or sourdough overnight focaccia as the base and let’s get baking.

Preheat the oven to 425°F degrees. Drizzle olive oil in a 9 X 12-inch baking dish. Transfer the prepared focaccia dough and toss until well coated in the oil. Cover and let rise for 30 minutes to allow the dough to stretch in the pan.

Bake focaccia until golden and cooked throughout, about 25 to 30 minutes.

As the focaccia bakes, transfer the jam to a piping bag and prepare the glaze. In a small mixing bowl, stir together sugar, milk, vanilla and salt until smooth.

While the focaccia is still warm, transfer it to a wire rack. Poke holes in the focaccia using a chopstick or butter knife. Fill the holes with dollops of jam.
Drizzle prepared glaze generously over the focaccia and use a pastry brush to ensure every nook is glazed. Let stand for 30 minutes at room temperature to allow the glaze to set.
