Get a head start on spring with this Lavender Lemon Spritzer! A gin-based cocktail featuring a homemade lavender simple syrup. There is a little trick to achieving that vibrant purple-ish hue (hint: it doesn’t come from the lavender). When making the simple syrup add a couple of fresh or frozen blackberries to the pot! It won’t overpower the actual lavender flavour, but it will naturally colour the syrup. When mixed with lemonade you are left with a vibrant magenta cocktail. Cheers!

For the lavender simple syrup, in a small pot over medium heat add the sugar, water, lavender and blackberries.
Bring to a boil and remove from heat once the sugar dissolves, about 2 minutes.
Let stand 15 minutes before straining. Refrigerate in a lidded jar until ready to use.
For the lemon lavender spritzer, fill a cocktail tumbler with ice.
Add the simple syrup, gin and lemonade. Stir until combined.
Finish with a splash of soda and garnish with a sliced lemon.
