A food trend that took social media by storm last year was the rise of dense bean salads, thanks to foodie influencer Violet Witchel. Dense bean salads, or DBS for short, are exactly what you think they are – filling, nutritious salads made with beans and other delicious accoutrements. The best part about a DBS is that it tastes better the longer it sits, so it’s perfect for easy meal prep. Plus, it’s a super affordable way to get in your daily dose of fiber.

This Mediterranean spin offers traditional Greek salad veggies, but feel free to swap for whatever you have in the fridge. The lemony, garlicky dressing will taste delicious no matter what you put it on, so get creative and enjoy!

Dense Bean Salad Ingredients
Step 1

Drain and rinse a can of white navy beans.

Step 2

Chop cucumbers, tomatoes, bell pepper, olives and shallot into bite-sized pieces and combine with beans.

Step 3

For the dressing, combine the olive oil, lemon juice, minced garlic and chopped dill.

Step 4

Mix in the dressing and taste for salt and pepper. If you can, let the salad sit overnight to marinate, but it can be enjoyed right away!
