This miso apple crumble is a simple, unfussy dessert with just enough character to elevate your typical apple crumble. The miso provides a subtle saltiness that adds a deep caramel flavour, giving this crumble an understated decadence – but not to the point that it overpowers the tartness of the apples. This is one of those recipes you can easily memorize and tweak according to taste, but I recommend following this recipe to a T as a starting point.
Tip: I love serving this recipe with a dollop of whipped cream to balance the sweetness, but you can also serve it with vanilla ice cream if you’d like.

Preheat oven to 415°F.
In a mixing bowl, make the filling: add the apples, brown sugar, juice of ½ a lemon, cinnamon, miso and a pinch of kosher salt. Using your hands, combine everything until the miso has mostly been distributed evenly.
Transfer the apples to your baking dish of choice (I recommend using a 6 ½ -inch pie plate, but you can also use a 7-inch loaf pan).
In the same mixing bowl, make the topping: add rolled oats, all-purpose flour, cinnamon, brown sugar, pinch of salt and butter. Using your fingertips, combine and pinch the butter into the dry mix until there’s no loose flour left.
Top apples with crumble mixture.
Bake in the oven for 15-20 minutes (or until the crumble is golden brown).
Let the crumble cool for 20 minutes before serving with whipped cream or vanilla ice cream.
