
Dates are great, but you know what’s even better? These no-bake 3-ingreident date balls coated in coconut and make for a great snack. Whether you’re hosting an Iftar this Ramadan or looking for ways to boost your energy throughout the day, these date balls are all you need.
I enjoy these date balls because they are sweet and so easy to make. The recipe is also fully customizable, which is always an added bonus. I used pecans in this recipe to add nutiness and maple syrup for added sweetness. You can substitute the nuts for walnuts or even cashews and omit the maple syrup since dates are naturally sweet. Also, I coated the date balls in shredded coconut, but you can also coat them in chocolate, cocoa powder, pistachio and anything you have in your pantry.
If your dates are hard, soak them in warm water for 10 to 15 minutes. If you feel like the mixture is too dry when blending them, add water or more maple syrup to get the right consistency. If the opposite occurs, and the date mixture is too soft, place it in the fridge for at least an hour to firm up.

Start by soaking the dates in warm water for 10 minutes. When soft enough, remove the pits, if unpitted.

Add dates, pecans and maple syrup (optional) to a blender or food processor and blend. If the texture is too thick, add water or more maple syrup until the desired consistency is made.

If the date mixture is too soft, place in the fridge for an hour.
Use a spoon, cookie scooper, or your hands to form balls with the mixture. Coat each ball in shredded coconut.
Place the date balls on a baking tray and refrigerate for at least an hour. For best results, refrigerate them overnight.
