Preheat oven to 375°F and line a baking sheet with parchment paper.
Cut the chicken breasts into cubes and season with salt and pepper.
Coat the chicken cubes individually in the beaten eggs first, then in the almond flour before placing them on the lined baking sheet.
Bake for 13-15 minutes or until golden brown and cooked through.
In a small saucepan, combine the garlic, scotch bonnet (if using), honey, soy sauce, water and cornstarch over medium heat until thickened, about 5 minutes.
Transfer chicken bites to a large bowl and then pour sauce over chicken, gently tossing to ensure they’re thoroughly covered.
Transfer the honey garlic chicken bites to a serving plate and top with sesame seeds and chives. Finish off with a squeeze of lime juice.
