Way more treat than trick — you are going to love making these peanut butter spider cookies! The creepy, crawly peanut butter cup spiders on top are easy to make for Halloween. Chocolate and peanut butter are my favourite candy combo, and these cookies deliver on both. The chewy peanut butter cookies have a soft center and lovely peanut butter flavour.
No piping bag? No problem! Use a single-use plastic bag for easy icing and speedy cleanup.

In a small mixing bowl, stir together the flour, baking soda, and salt. Set aside.
In a large mixing bowl or the bowl of stand mixer, add the butter, brown and white sugar. Using a hand or stand mixer fitted with the paddle attachment, blend the sugars and butter together. Add the egg and mix until thoroughly combined. Add the peanut butter and mix until smooth.
Add the flour mixture and blend until just combined. Stop the mixer and finish stirring with a rubber spatula. Chill the dough for at least 30 minutes before scooping.
Preheat the oven to 350°F. Line baking sheets with parchment paper.
Scoop the chilled dough into 1½ tablespoon-sized balls. Roll to smooth then toss in sugar. Place the cookie dough on the baking sheets, about 2 inches apart.
Bake for 10 to 12 minutes or until puffed in the center and firm around the edges.
Cool the cookies for at least 5 minutes. Place an upside-down peanut butter cup on top. Do not press down. The heat of the cookie is enough to gently melt the chocolate and secure in place.
Add two candy eyeballs to each peanut butter cup. They should stick. If not, then “glue” on the eyes with the melted chocolate in the next step.
Melt the chocolate chips in the microwave at half power, stirring every 45 seconds. Spoon the melted chocolate into a plastic zip-top bag or piping bag. Pipe 8 spider legs on the top of each cookie.
