Peppermint simple syrup

cup granulated sugar
½
cup water

tsp peppermint extract
Martini
1 ½
oz coffee liqueur
1
oz vodka
1
oz espresso
1
oz peppermint simple syrup
Red and green sprinkles, for rimming the glass
Espresso beans, to garnish

Step 1
In a small saucepan over low heat whisk together the sugar, water and peppermint extract. Bring mixture to a gentle simmer and remove from heat. Refrigerate until ready to use. This can be made up to a week in advance.

Step 2
Fill a cocktail shaker with ice. Add the coffee liqeur, vodka, espresso and simple syrup. Mix until chilled and well combined.

Step 3
Rim a stemmed glass with sprinkles. Strain mixture into glass and garnish with espresso beans.
