Cook the pasta according to packaging till al dente. Don’t forget to save some of the pasta water for the sauce.
While the pasta is cooking, in a large skillet over medium heat, add olive oil, followed by bell peppers and onion. Sauté until tender, about 3-4 minutes.
Add the garlic and cook until fragrant, about 1 minute. Add the thyme, salt and jerk seasoning and mix to coat the veggies.
Add the flour, stir and cook for 1-2 minutes before adding the chicken stock and heavy cream. Stir to combine and reduce the heat to low, allowing the sauce to simmer and thicken.
Stir in the parmesan until fully melted and incorporated. Add in the cooked pasta, adding about a ¼ cup of the reserved pasta water, if needed. Stir until everything is well coated.
Remove from the heat and serve immediately with sliced green onions and extra parmesan. Enjoy!
