In a food processor or by hand, finely chop garlic, green onions, cilantro and ginger.
Once finely chopped, mix aromatics in a large bowl with pork, soy sauce, sesame oil, white pepper, sugar, corn starch, and MSG if using.
Spoon a couple tablespoons of pork mixture onto a tortilla, spreading it evenly with the back of the spoon to coat the surface of the tortilla. Repeat with all remaining tortillas.
In a large skillet over medium-high heat, drizzle cooking oil and place tortilla in the pan, dumpling mixture side down. Use a spatula to press down and ensure maximum crispiness on the pork. Cook for 3 to 4 minutes.
Flip and cook for an additional 1 to 2 minutes to crisp the tortilla. Repeat with remaining tortillas.
Garnish smash dumpling tacos with chili crisp, cucumbers, green onions, cilantro and sesame seeds. Serve immediately.
