
My fondest memories of visiting Spain all involve tapas: the little snacky appetizers that are combined to make a full, luscious meal that’s best enjoyed alongside a generous glass of wine. One of my favourite tapas dishes that I tried was Gambas al Ajillo, a.k.a. shrimp in garlic sauce.
Shrimp is cooked to juicy perfection in a simple sauce of olive oil, garlic and red pepper flakes. It’s then finished off with a splash of wine, lemon juice and parsley. This is one of those simple dishes that feels so sophisticated: I love serving it alongside some crusty bread, nice Spanish cheese and plump olives for a tapas-inspired feast. To turn it into a dinner, toss it with pasta or serve over rice!

In a large frying pan, heat oil over medium heat. Add the garlic and red pepper flakes and cook for 3 minutes, stirring occasionally.

Add the shrimp, salt and pepper to the pan. Cook for 4 minutes, or until shrimp is almost cooked through.

Stir in the wine, lemon juice and parsley.

Plate and serve alongside crusty bread.
