The crisp and crunchy lettuce leaves are filled with tender chicken and a ton of veggies that’s all coated in a spicy-sweet sauce. In a small bowl, combine all sauce ingredients and set aside.

In a large skillet over medium-high heat, drizzle oil to coat the pan and then add in ground chicken. Season with a pinch of salt and cook until browned and cook through, about 6 minutes. Transfer meat to a plate and set aside.

Return pan to heat. Drizzle with additional oil to coat, then add in garlic, ginger and scallion whites and let sizzle for 30 seconds. Then, add in carrots and celery, stirring for about 6 to 7 minutes or until softened.

Add mushrooms, red peppers, sauteing for 2 to 3 minutes until just softened.

Return cooked chicken to the pan and coat with all of the sauce, stirring to combine until sauce has thickened slightly, 3 to 4 minutes. Just before removing from the heat, add in scallion greens and combine.

Remove filling mixture from heat and transfer to a serving plate. Allow to cool slightly and set out lettuce wraps, cilantro and sesame seeds for assembly.

To assemble, fill lettuce leaves with spicy chicken filling, and top with cilantro and sesame seeds.
