Start by cooking the pasta, according to the instructions on the package. Be sure not to overcook the pasta because you will place the pasta in the oven at a later step allowing it to cook further.
Preheat the oven to 350°F.
Shred all the cheese and divide it into two bowls. Note: This took me around 9 minutes to do, which is the most tedious step in the recipe, but then it’s smooth sailing from here.
Add garlic powder, smoked paprika, salt, and pepper in a small bowl and separate into two halves.
Melt the butter in a pot, and then once melted add flour and half the seasoning until you create a roux.
Slowly pour evaporated milk, while consistently whisking on medium heat, and then pour in heavy cream and rest of the seasoning.
Once there are no lumps and a thick texture forms, lower heat to low and gradually add in half the cheese. Keep whisking to avoid lumps.
Mix the cooked pasta with the cheese sauce until fully incorporated.
Add a layer of macaroni, then a layer of cheese, more macaroni and them the rest of the cheese.
Bake the mac and cheese for 30 to 40 minutes until all the cheese is melted. And then, broil for 3 to 4 minutes until golden brown.
