Zucchini Fritters

Chop zucchini into uniform matchsticks. Place the zucchini in a bowl lined with cheesecloth. Sprinkle the zucchini with a little salt and toss to coat.
Form the cheesecloth into a bundle and squeeze out the excess moisture. Leave the zucchini to drain for 10 minutes.
Place the yogurt, garlic, ginger, salt, and mint in a bowl and stir to combine. Chill until ready to serve.
Pour the honey into a small bowl and add the harissa. Stir to combine. Set aside until ready to serve.
Place the flour, cornstarch, baking powder, and salt in a large bowl. Whisk to combine. Add the zucchini and toss to coat. Pour in the beer and stir to combine.
Pour 2 inches of neutral oil into a large cast-iron skillet. Heat the oil to 375°F. Using a tablespoon as a guide, spoon the zucchini mixture into the hot oil. Fry until the fritters are golden. About 3 minutes on each side.
Transfer the finished fritters to a plate lined with a paper towel and keep warm in a low oven.
Once all the fritters are fried, place them on a platter alongside the dips. Garnish the fritters with sprigs of fresh mint and serve immediately.
